Chick-fil-A Superfood Side Copycat
One of my favorite things to order from Chick-fil-A would definitely be their Superfood Side. If they ever discontinue it, I am going to be a very sad customer!
They serve it in a little bitty cup, but if it were up to me, I would eat it out of a huge salad bowl. I think it’s THAT good.
Chick-fil-A uses broccolini instead of regular broccoli, but regular broccoli works fine too. I highly recommend massaging your kale before chopping it up, though, because it helps make the salad more tender and the flavors marinate better together.
If you want to amp up the protein content, feel free to add grilled chicken or roasted chickpeas for a vegan-friendly option. You could even add a side of sourdough bread to make it more filling and to promote gut health.
Chick-fil-A Superfood Side Copycat
Ingredients
For the salad:
4 cups chopped kale
1 bunch broccolini (or broccoli)
⅓ cup dried cranberries
⅓ cup raisins
⅓ cup chopped walnuts
⅓ cup chopped cashews
For the dressing:
¼ cup olive oil
¼ cup pure maple syrup
1 tablespoon light brown sugar
2 tablespoons apple cider vinegar
½ teaspoon dijon mustard
½ lemon, squeezed
Salt and pepper, to taste
Instructions
Massage kale to tenderize and then chop and add to a large bowl,
Chop broccolini and add to the salad bowl.
Add remaining salad ingredients and toss.
In a small bowl, whisk all of the dressing ingredients together and gradually pour over the salad.
Toss & serve!
